ITALIAN COOKING CLASSES

We offer classes every Saturday and Sunday for up to 10 guests. To find a class you can either search by date using our class calendar or scroll down below to search by month & regional menu. On Saturday’s each month is dedicated to a region of Italy and on Sunday’s we offer alternate weekends of our Pasta Masterclass and our Seasonal Vegetarian Class.

Larger classes are available for private bookings and the cooking school provides the perfect environment for corporate team-building events.

Just wanted to thank you both again for a great day on Saturday – dom & I both had such a good time & learnt a lot.
I tried some potato gnocchi last night and not only were they relatively quick to make but my first attempt tasted better than my Nonna’s! Really light and soft, I’ll be making these all the time now!!

Matteo & I are excited to share we are now offering a weekly “A Taste of Barossa”  cooking class & lunch on Thursdays. 

Arriving at Casa Carboni at 9am for coffee and a slice of Matteo’s delicious local fruit & almond cake, you will then spend approximately 3 hours in the kitchen to prepare 4 delicious Italian recipes using beautiful local produce. The menu will be ever changing according to what’s in season.

Our vegetarian class follows the same format as our Saturday Regional menu classes and runs every second Sunday all year .

Sofia & Filippo have been asking for weeks for some of Matteo’s weekend treats so there were  squeals of delight when I said I had them aside this morning! 

One the bar we have Bomboloni w Italian chocolate custard, Choux Royale w classic Italian custard with a hint of Chartreuse, soft meringue & raspberries from yesterday’s @barossafarmersmarket , Torta Caprese flourless local almond & @valrhonafrance dark chocolate w meringue, mini cakes w local plum & almond. Savoury is focaccia w hand cut @parmahandcraftedcuredmeat mortadella & local rocket... Sourdough loaves..

Friday nights...

I was delighted to find these roses survived this afternoon’s storm (and welcomed rain!) for our dinner guests tonight!

Friday night dinner resumed last week and we are full steam ahead! While Tom starts vintage to make his beautiful @tomshobbrook wines I’ll be keeping Matteo company and on his toes 😂.

See you tomorrow from 9am for coffee, treats & sourdough loaves.

Yesterday the bambini had a lot of fun crabbing & fishing! They only caught 2 crabs big enough to keep so Matteo made a Sugo with super ripe cherry tomatoes, garlic, herbs & the quartered crabs for our @pastamancini spaghetti for a late lunch..

The afternoon fishing expedition was equally as fun but everything caught went back in the water. Fortunately we were told where to source local fish in Stansbury so off we went back to try out the whiting! 

The night before we had bought the garfish. Both simply grilled for a couple of minutes in the little oven (with a generous drizzle of olive oil, salt & pepper) at the beach house, steamed potatoes & green salad... very simple but very delicious!

A little road trip over to Port Vincent for a few days with the bambini & nonni! Of course as with all our other SA seaside trips it’s raining and overcast but everyone is happy and instantly relaxed! Hoping the rain has made it to the regions affected by the bushfires...

Tomorrow we will try taking out the rakes to look for 🦀, wish us luck!!

This morning we received some delicious edible gifts! Freshly picked sweet little zucchini’s with their flowers still attached 😍, and a little box of homegrown garlic.. then later this afternoon there will be some super ripe apricots 😍😍

Lunch today at home was @pastamancini Spaghettini with slices of baby zucchini that I added to the pot for the last minute of cooking the pasta, strained & tossed through a fresh batch of basil pesto from @juliaostro ‘s book Ostro (still using walnuts in place of pine nuts) and finished with some of the chopped zucchini flowers & feta. So delicious!

One of the things I love about this region is the sharing of homegrown produce. 

Now to decide whether to stuff & fry the rest of the flowers or make a salad! If I had some pipis I’d be having pasta again tonight with pipis, garlic & zucchini flowers ....
