Cooking Classes

Matteo’s philosophy is to teach recipes that can be easily replicated at home so you can prepare these wonderful dishes for your friends and family. Whether a beginner or confident in the kitchen, classes are small intimate groups to ensure you get the most out of the experience.

 

Participants of Saturday classes are invited to join Matteo for a tour of the Barossa Farmers Market where you will meet the wonderful producers and collect ingredients for your class. You will have time to visit the rest of the market before meeting Matteo back at Casa Carboni.

February & March 2017
A Taste of Italy: Sicilian Long Lunch Menu

When: Every Saturday
Duration: 9am – 2pm
Cost: $185 per person

In this hands on cooking class you will prepare an Italian long lunch menu inspired by the region of Liguria using Matteo’s morning pick of Barossa Farmers Market produce including:

Antipasto: Caponata, a modern take on a Sicilian classic, layers of delicious seasonal vegetables oven roasted and served with a pesto made with fresh local herbs, nuts, sultanas, local vinegar and extra virgin olive oil

Fresh pasta: Casarecce with Sugo “alla Norma” a classic hand rolled pasta with a delicious tomato based sugo with fried eggplant & fresh basil sourced from the Barossa Farmers Market

Gnocchi: Fresh Ricotta Gnocchi with Pesto “alla Trapanese” ripe tomatoes, nuts, garlic and mint from the Barossa Farmers Market and Parmigiana Reggiano cheese for a perfect summer dish.

Dolce: Cannoli Siciliani crisp chocolate pastry filled with South Australian ricotta, chocolate & pistachios.

A Taste of Italy: Emilia Romagna

In this hands-on cooking class you will prepare an Italian long lunch menu inspired by Matteo’s home region of Emilia Romagna using beautiful local produce sourced from the Barossa Farmers Market & the farm gate such as:

Piadina Romagnola: served w Barossa Valley Cheese Co cheeses, artisan cured meats & Torzi Matthews local wild olives

Fresh Pasta: Hand Made Tagliatelle with Ragù alla Bolognese

Potato gnocchi

Zuppa Inglese: a decadent dessert with layers of sponge cake dipped in Alchermes with classic and chocolate crema pasticcera…

In this hands-on cooking class you will prepare an Italian long lunch menu inspired by the region of Piemonte using beauiful local produce sourced from the Barossa Farmers Market & the farm gate such as:

Antipasto: Vitello Tonnato

Fresh Pasta: Ravioli del Plin

Risotto

Dessert: Bonet

A Taste of Italy: Le Marche Long Lunch Menu

When: Every Saturday
Duration: 9am – 2pm
Cost: $185 per person

In this hands on cooking class you will prepare a traditional Italian long lunch menu inspired by the beautiful Adriatic coastal region of Le Marche using Matteo’s pick of Barossa Farmers Market produce including:

Antipasto: Calcioni (Calzoni) little pastry envelopes filled with spiced fresh ricotta

Fresh pasta: Vincisgrassi (a traditional dish for a family Sunday lunch) Le Marche version of lasagne with a delcious ragu

Ricotta gnocchi: made with swiss chard and Pecorino cheese, served with BD Farm Butter and fresh Sage

Dolce: salame di cioccolato, the perfect end to a long lunch with coffee

A Taste of Italy: Veneto Long Lunch Menu

In this hands on cooking class you will prepare an Italian long lunch menu inspired by the region of Veneto using Matteo’s morning pick of Barossa Farmers Market produce including:

Antipasto: Baccalà Manteccato

Fresh pasta: Bigoli with anchovies, white wine and parsley

Risotto: Al Nero di Seppia with ragù di Calamari

Dessert: Tiramisu

Private Classes

Following are some popular classes we offer for private groups, however we are happy to propose other menus on request. Private classes are fantastic for team building sessions, groups of friends, family reunions, birthday parties, wedding anniversaries, as well as hens parties. We now also offer larger private classes at the beautiful Yalumba Winery, for quotes please contact us directly.

Express Class: Fresh Pasta & Dessert

When: Private bookings Wednesdays & Fridays
Duration: 10.30am – 1pm
Cost: $125 per person including lunch
Class Size: Minimum 6 guests, maximum 12 guests

In this hands on class you will prepare 2 classic recipes including a fresh pasta and dessert using locally sourced produce from the Barossa Farmers Market. Following the class you be seated in the Enoteca to enjoy the beautiful dishes you have prepared paired with a glass of European wine and coffee. Recipe booklet included.

A Taste of Italy: Mastering Gnocchi

Class Size: Minimum 4 guests, maximum 10 guests

In this hands-on cooking class you will prepare 4 gnocchi recipes with different doughs and matching sauces (i.e. semolina, potato, ricotta, beetroot gnocchi) using local seasonal produce. Following the class you be seated in the Enoteca to enjoy the beautiful dishes you have prepared paired with a glass of European wine and coffee. Recipe booklet included.

Taste of Italy: Emilia Romagna

This regional tour will take you to Matteo’s home in Emilia Romagna. A hands on cooking class with 4 recipes. Following the class you be seated in the Enoteca to enjoy the beautiful dishes you have prepared paired with a glass of European wine and coffee. Recipe booklet included.

If you do not have the minimum amount of guests for a private class we will release the remaining places (up to a class size to 8 guests) on our calendar for others to book into.

Learn the history & master the art of making pasta with 4 fresh pasta recipes (different doughs) and matching sauces such as Tortelli, Tagliatelle Verdi, Maccheroni alla Chitarra & Strozzapreti. Taste of Italy: Tuscany
